
New Restaurants to Try in the Treasure Valley This Summer (2026 Guide)
If you’re anything like my wife and me, one of our favorite date nights is trying someplace we’ve never been before. The Treasure Valley’s food scene just keeps getting better, and it seems like every time you turn around there’s another restaurant opening its doors. Here are a few that have caught my eye.
New Flavors Arriving In Meridian

El Pollo Loco
One of the most anticipated openings is Idaho’s very first El Pollo Loco, bringing its famous fire-grilled chicken to Meridian. The restaurant just opened on June 29, in front of Costco on Chinden.

Zao Asian Grill
Fans of Asian cuisine need to try Zao Asian Grill at the Village In Meridian. The Yakisoba Noodles with chicken and the chili lemongrass sauce is awesome!

Boise Crust
I love food trucks and Boise Crust has been one of my favorites, so I was really excited when I found out they were opening their first brick and mortar location in Meridian. If you like Detroit Style Pizza, go check them out at 1580 N Stonehenge Way.
Boise Isn’t Slowing Down On New Food Options

El Gaucho
El Gaucho is an upscale Seattle steakhouse bringing tableside dining and premium steaks to downtown Boise. They opened in January of this year (2026) at 610 W Idaho St.

Boise Post
The Boise Post is a rooftop restaurant atop the new AC Hotel/Element by Westin downtown, 1005 W Grove St. on the 16th Floor, with incredible city views and a menu inspired by Boise itself.

Betty's Cafe
Betty's Cafe is a Boise Bench breakfast and lunch spot serving pastries, smash burgers, and French press coffee. They opened in April of this year (2026) and are located at 4504 W. Overland Rd.

Coa Cantina
Coa Cantina opened in East Boise's Harris Ranch in February of this year. (2026) They feature Mexican favorites and creative cocktails.

Schnitzel Fritz
Schnitzel Fritz, 1023 W Main St, has already drawn attention with its German-inspired sandwiches, pastries, and deli favorites. I highly recommend the Sauerkraut Schnitzel Sandwich.
