
Cajun Eatery Expanding Into Pacific Northwest: Will Idaho Get One?
A Southern California-based Cajun restaurant chain recently announced a massive expansion into the Pacific Northwest after opening its first location in Oregon.
For Idaho fans of southern cuisine like fried catfish, shrimp po-boys, jambalaya, and beignets, a company that first opened doors in Pismo Beach, California, recently announced plans to open 15 more locations throughout the Pacific Northwest by 2026.
Cajun Restaurant Chain Potentially Eyeballing Idaho For Expansion
Huckleberry's began its run in 2008 and has since expanded to more than 30 locations in California. Most recently, they opened a location in Portland, Oregon, and are not nearly done planning new sites.
It might be illogical to think that Idaho would not eventually inherit a Huckleberry's restaurant, since plans are to open over a dozen more locations in the PNW before 2027. The company also operates two sites in Texas and one in Nevada.
Huckleberry's menu boasts dozens of plates with southern flair, such as fried green tomatoes, fried okra, Louisiana catfish, Cajun chili, chicken and shrimp gumbo, and extensive offerings of omelets, sandwiches, burgers, coffee drinks, and cocktails. For those with a southern sweet tooth, dessert items include an assortment of beignets.

No immediate plans for an expansion site in Idaho have been announced to date according to details shared by KOIN, but it would only make sense that they open doors in the southern part of the state. For franchising information, click here.
