The Treasure Valley is home to some incredible restaurants with everything from classic to unique cuisine. Today we are going to focus on Idaho inspired dishes that are either newly available or have been local staples for decades. What should I add to the list?

Forbes Magazine did a little research and figured out who the richest person is in every state, and in Idaho that person has a background in the potato industry, but also dabbles in fertilizer and and phosphate morning. It's a name you know.

Many of us have probably seen the Idaho Potato Comission's giant traveling potato, either around town, at a BSU game, or maybe even a national tv appearance. Now, you could stay inside it.

Last year, organizers of the Idaho Potato Drop refreshed the giant potato they drop in front of the Capitol on New Year's Eve and made it a big, shiny "glow-tato." The Idaho Potato Commission must have been impressed, because it's doing something similar to the iconic 6-ton potato it drives across the country.

Our local potato giant, J.R. Simplot Co. has filed a federal lawsuit against another potato/fry company McCain Foods, claiming they copied their Sidewinder fries.

I know, I know, we work hard to convince friends around the country that we're not just about fields of potatoes in the Treasure Valley.  We are, but it's also important in our state.

Remember that guy I told you about back in February, that was eating nothing but spuds for a year?  Idaho should make this guy its potato-loving poster child. And he's having some major weight loss success!  But it's not all good news.

Andrew Flinders Taylor is attempting something that no one else we know has ever done before.  He's eating nothing but potatoes this year, and so far he's lost 22 pounds.

We can safely say no other city in the US rings in the new year like Boise.
