Just over a month ago, we shared with you the news that changes to one of the Treasure Valley's most popular Mexican restaurants had been announced.

If you're a true 'local' in the area, we're almost certain that you've been to Imelda's. Considered a 'hidden gem' by some and a total staple by others, Imelda's Mexican Food right across from the College of Idaho has long served some of the best tacos and more, anywhere in the area!

Those 'big changes' involved new ownership at the long-time local favorite.

Now, even bigger changes are on the way to Caldwell. It's the end of an era and the start of something new!

New name, new vibe--are you ready? 

While reviews thus far had been great--we can't imagine the kinds of pressure it has been to uphold a restaurant that has been around for so long--we're excited to see that a new take on the trendy local tex-mex restaurant will be on the way!

As stated on their Facebook page:

After a lot of reflection and with the utmost respect for Imelda and her legacy we have decided to rebrand the restaurant to get a fresh start and better reflect the fresh new vibe we are creating.

Added hours, patio updates, and expansion into beer and wine offerings are all things that ownership mentioned could be on the way for 'Chico's'!

Is there anything better than hearing about a local business doing well?? We hope nothing but the best for new ownership at the local staple that is Imelda's!
