Conquer Your Fear of the Instant Pot With This Easy Chili Recipe
For the second year in a row the Instant Pot electric pressure cooker was Amazon's best selling kitchen appliance during the holiday season.
Were you one of the lucky people received one for a gift? If you were, you were probably thrilled when you unwrapped it. That feeling's changed over the last few weeks. Now you're sitting in your kitchen, staring at the box wondering why you're absolutely terrified to take it out of the box and plug it in.
I'm not mocking you for that at all, because I was the same way! I received my first Instant Pot as a birthday gift two years ago and it took me a month and a half to work up the courage to try it out. In the end, I chose the chili recipe that looked the easiest out of the fifty or so that I looked at. When I went to Albertsons to pick up my ingredients, my cashier just had to tell me this story about how another customer was using his wife's Instant Pot and it blew up in his face. He ended up having to go to Primary Health to have them take a look at the burns.
Grrrrrreat. I've got this, right? The entire time I was preparing this chili, I'm breaking out in a cold sweat and my heart rate is through the roof. I'm not sure who performing my first "quick release" scared more...me or the cat.
But you know what? In the end the chili was PERFECT. It was the first step to conquering my Instant Pot fears and now we use ours at least twice a week making dinner.

Instant Pot Taco Ranch Chili
Ingredients
- 1 pack of taco seasoning
- 1 oz pack of ranch seasoning mix
- 1.5 lbs boneless, skinless chicken breast
- 2 16 oz. cans mild chili beans
- 1 16 oz. can white beans
- 1 10 oz. can Rotel
- 1/2 tsp chili powder
Directions
- Combine all ingredients in Instant Pot. Do NOT drain or rinse the beans.
- Cook at high pressure for 15 minutes. Do a quick release once cooking cycle is complete.
- Remove chicken breasts from pot and shred with a fork. Put chicken back in pot and stir.
- Serve with your choice of toppings (sour cream, shredded cheese or fresh cilantro)
