The weather has been sunny and warm and school is out, making it the perfect time for summer treats! But hold on...summer treats don't have to be unhealthy. Smoothies are always great, but for a change of pace, try this Watermelon Slush Recipe! Watermelon is the ultimate summertime fruit to me and buying it locally when it's in season decreases the carbon footprint, so it's a win-win: healthy and environmentally friendly.

Watermelon Slush
2 cups cubed watermelon
¼ cup water
1 cup frozen strawberries
1 Tablespoon honey (optional)

Place water and watermelon in blender. Blend until smooth.
Add strawberries and chop/blend until slushy.
If the watermelon is not super sweet, add 1 Tablespoon honey to sweeten.
If slush is too thick, add water 1 Tablespoon at a time and blend to desired consistency.
Makes 2-4 servings.
