At our "4th Annual Potato Gleaning for Charity" I spoke with several moms (including Roberta Harman pictured above) and we all agreed that we could use some new ideas for ways  to prepare spuds that doesn't involve mashing/baking/shredding.

I was digging around online and came across some recipes for Fondant Potatoes and Potato Waffles.   I haven't tried them out yet but the pictures look tasty and they don't look like they'd be all that difficult to make.   Here is the link for some some new potato ideas.

My trick for tasty moist baked potatoes?   Scrub em real good, pat dry,  slather with extra virgin olive oil and sprinkle with sea salt then pop 'em in the oven at 350 for about an hour or so until they are fork tender.
